Ingredients
  

  • 2 cups uncooked penne pasta
  • 4 tbsp unsalted butter
  • 1 medium onion
  • 1/4 cup all-purpose flour
  • 1 3/4 cups reduced-sodium chicken broth
  • 3 cups shredded rotisserie chicken
  • 1 (7.5 oz) jar marinated quartered artichoke hearts, drained
  • 1 cup crumbled feta cheese
  • 1/2 cup chopped oil-packed sun-dried tomatoes
  • 1/3 cup sliced pitted Greek olives
  • 2 tbsp fresh parsley, chopped

Method
 

  1. Cook the penne according to the package directions until al dente. Drain and set aside.
  2. Melt the butter in a large oven-safe skillet over medium heat. Cook the onion until softened, then stir in the flour. Gradually whisk in the chicken broth and cook until the sauce has thickened.
  3. Stir in the shredded chicken, artichoke hearts, sun-dried tomatoes, olives, and 3/4 cup of the feta cheese. Add the cooked pasta and toss until everything is evenly coated.
  4. Sprinkle the remaining feta over the top and broil for 4–6 minutes, or until the cheese is lightly golden and bubbling. Garnish with fresh parsley and serve warm.

Notes

  • Rotisserie chicken makes this recipe quick and convenient.
  • If the sauce becomes too thick, add a splash of chicken broth to loosen it.
  • Watch closely while broiling to prevent the cheese from burning.
  • Store leftovers in the refrigerator for up to 4 days.
