What are Chicken Fajitas?
Chicken fajitas are a Tex-Mex dish made with seasoned chicken, sautéed peppers, and onions, traditionally served with warm tortillas and toppings. The chicken and vegetables are usually cooked at high heat to give them a little color while keeping the vegetables tender-crisp.
For this version, the chicken is made using my Chipotle Chicken recipe, then cubed and combined with sautéed peppers and onions. The filling is wrapped in flour tortillas with Mexican cheese and lightly fried in the skillet until the tortilla is golden and the cheese is melted.
Ingredients
For the Chicken Fajitas
- 2 chicken breasts (about 1 lb), seasoned and cooked using the [Chipotle Chicken recipe]
- 1 tbsp unsalted butter
- 1 tsp salt
- 1 green bell pepper, thinly sliced
- 1 red bell pepper, thinly sliced
- ½ white onion, thinly sliced
- Small flour tortillas
- Mexican mixed cheese
Optional Toppings
- 1 jalapeño, thinly sliced
- Fresh cilantro
- Lime slices or wedges
- Avocado
- Pico de gallo
How to Make Chicken Fajitas
1) Cook the Chicken
Prepare the chicken according to the Chipotle Chicken recipe. Once the chicken is fully cooked and reaches 165°F, remove it from the skillet and let it rest briefly.
Cut the chicken into bite-sized cubes and set aside.

2) Cook the Peppers and Onions
Using the same skillet you cooked the chicken in, add 1 tablespoon of unsalted butter over medium-high heat.
Add the sliced green pepper, red pepper, and white onion. Sprinkle the vegetables with 1 teaspoon of salt.
Cook for about 3–4 minutes, stirring occasionally, until the vegetables are tender-crisp. You want them softened but still to have some bite.
Remove the vegetables from the skillet and set aside.

3) Assemble the Fajitas
Place a flour tortilla on a clean surface.
Add a thin layer of Mexican mixed cheese as the base, followed by some of the cubed chicken and sautéed vegetables.
Be careful not to overfill the tortilla. You want enough room to fold it without the filling spilling out.
Fold the tortilla in half.

4) Fry the Fajitas
Place the filled tortilla into the same skillet over medium heat.
Cook for about 1–2 minutes per side, or until the tortilla is lightly golden and crispy and the cheese inside has melted.
Repeat with the remaining tortillas and filling.

5) Add Your Toppings
Serve the fajitas hot with your favorite toppings.
Try adding fresh cilantro, lime, avocado, pico de gallo, or sliced jalapeños.
Pro Tips
- Don’t overcook the vegetables. Cooking them for just 3–4 minutes keeps them tender-crisp instead of mushy.
- Use the same skillet. The leftover seasoning and browned bits from the chicken add extra flavor to the peppers and onions.
- Don’t overfill the tortillas. Less filling makes them easier to fold and fry without breaking.
- Keep the heat around medium when frying. This gives the tortilla enough time to crisp while allowing the cheese to melt.
- Let the chicken rest before cubing it. This helps keep the chicken juicy.
- Warm tortillas are easier to fold. If your tortillas are cold or stiff, warm them briefly before assembling.
